This can lead to serious poisoning and have unpredictable health consequences. Therefore, it is very important to know why green potatoes should definitely not be eaten.

The main reason why green potatoes are dangerous to eat is the high content of toxic substances, in particular solanine and chlorogenic acid. Solanine is a natural toxin that is a plant's defense mechanism against pests and diseases. High concentrations of solanine can accumulate in potatoes, especially in green areas, as well as in the skin, sprouts and damaged parts of tubers.

In green potatoes, solanine is formed as a result of exposure to sunlight when the tubers are not stored properly and are exposed to light. Solanine has a bitter taste, so when you try to eat green potatoes, you may notice an unpleasant aftertaste, but this is not always a sufficient sign to refuse the food. Even small amounts of this toxin can cause serious poisoning.

When eating green or sprouted potatoes, a person may experience symptoms of poisoning such as nausea, vomiting, abdominal pain, diarrhea, headache, and dizziness. In some cases, poisoning can lead to disorders of the nervous system, severe allergic reactions, and even death, especially if large quantities of potatoes containing solanine were consumed.

It is important to know that the level of solanine in potatoes can vary depending on their storage conditions. Storing tubers at low temperatures and in the dark significantly reduces the concentration of toxins. However, if the potatoes have already turned green, such tubers should be thrown away immediately. You should never eat sprouted potatoes, because even after heat treatment, solanine is not completely destroyed.

Healthy potatoes, as a rule, have a uniform color and the absence of any signs of damage or green spots. If you notice that the potatoes are green or have sprouts, it is best to remove these parts or throw away these tubers entirely, because even small areas of green can be a source of dangerous toxins.

In conclusion, health should always come first. Consuming green potatoes is a serious threat to the body, so you should be careful with this product. Use only fresh, properly stored potatoes, and do not risk your health by neglecting safety rules when preparing food.
